20x16 is a great size. Stick to comfort and ergonomics first. A 20" bass drum will cover any genre of music with no issue.
Sabian can make custom cymbals as well as some discounted models. It's very possible you can get something with the exact same specs.

Good call. I was also unhappy with a set of Tama Pedals (Tama HP310LW Speed Cobra 310 Double Bass Drum Pedal) I purchased earlier this year. I returned them and went back to Pearl immediately.
The 20" AAX Sabian Metal Ride is a great choice for what you're after. I've had one since the 90's and it's still one of my favorites.
