Need help on audio interface/mics/home studio questions

I’ve been playing my kit a lot more recently (due to some new additions) and I want to record myself.

my questions
Can audio interfaces be daisy chained to produce more channels or is it smarter to just purchase the interface with the proper amount of channels first go round?

I have a 7 pRice kit and 8 cymbals (details listed below). For a home studi for YouTube and Instagram videos what sort of mic set up would be needed? 2 mics? 4 mics? 10 or 11 mics (11th came from the auxiliary snare) I’m just insolent in the ways of how the hardware works with these things. Computer wise I’m set however I do own a windows system but i can run multiple OS if needed.

Are subkicks really worth it?! The video I saw it seemed to help with that low end.

I have a Mapex pro m; 2x rack toms 12in, 13in; 2x floor toms 16, 18in; 14x5.5 set snare but customized
And my auxiliary snare 12x5.5 aux

I have 8 cymbals all Meinl Dark Classic Customs 16in hihat, 18in & 20in crashes, 22in crash/ride, 18in trash
China, 16in trash stack, 18in trash crash, and a 12in trash splash.

Last photo was just me flexing my new truck 5.0 drive shaft lol.. it does make a huge difference though! They make them for Pearl, Tama, etc

It depends on the interface. Some of them have additional SPDIF inputs, so you can connect another interface\preamps. What kind of interface do you have?

If you are looking to purchase, I'd just get one with the amount of channels you'll need right off the bat.

The amount of mics you need for Instagram or Youtube is directly proportionate to how much you care. I used to just use my phone. I use two mics now, sometimes, or sometimes still just my phone. I'm not trying to be social media star, though.

For home studio purposes, more is better. You can always mute mics you don't want or need, but giving the mix engineer more control over individual voices is great.

You definitely want to treat an interface like an investment, especially if you want to use it to record things for other people. Definitely a "buy nice, don't buy twice" situation.

I bought a Focusrite 18i20 for full kit recordings... very happy with it. The preamps are really nice for the price. It's been super stable so far too, haven't noticed any weird connectivity issues or anything.

I've also got a Rubix22 that I use for quick and dirty Instagram recordings. It's small, so I put it in my knapsack with a kick mic and an overhead, to bring to my rehearsal space.

I’ve been looking at the 18i20 2nd Gen a lot lately and sweet water had this deal with the interface 3x Shure Sm57’s, a Shure beta 52a, and some pro Co EXM xlr cables. Separate it was over 1k but they are offering for 850$ if anything I’d get the interface for sure but I do want an sm57 on my snare and a beta 52a as my inside mic for my bass.. but I’m still torn between Shure, earthworks, and Sennheiser.

I made that mistake when I first got into recording...I bought an 8-channel interface, but needed more...added another 8-channels via ADAT....another project required more channels, so got a 3rd interface via sPDIF (I think)...finally said F-it and got an x32 and a s16 Digital snake...which was about the cost of the 3 interfaces combined...so in my case, "buy nice, don't buy thrice."

I use the 18i20 as well for home recording and for live tracks with great results! I have the 3rd gen currently and have used the 2nd gen as well and the pre's in the 3rd are miles better than the 2nd. Absolutely more clear and a lower noise floor!
